5 Easy Breakfasts for Chilly Autumn Mornings

As the days are drawing in, you may be experiencing the first dark mornings of the autumn season. Waking up to a slightly crisper air and your bed may feel that little bit harder to leave. Here are five breakfast options that make getting out of bed one step easier.

Apple, Cinnamon & Walnut Porridge

A warm bowl on a cold morning doesn't need much of a hard sell. Porridge suits an autumn sunrise better than most things do. Oats are packed with fibre, which helps keep things moving smoothly. Not only that, but oats contain a heap of nutrients including protein, vitamins and minerals such as magnesium and phosphorus.

My favourite version of porridge is an autumnal classic. Cook your oats with your milk of choice, stir through with a pinch of cinnamon and chopped or stewed apple. Top with a small handful of walnuts for the crunch.

Banana, Cinnamon & Peanut Butter Overnight Oats

For those mornings that call for a prepared breakfast, this is another great autumnal option. Keep the oat base that we know and love, but make it grab-and-go. Same oats, similar flavours, less of the effort in the morning.

Start by mixing oats, plant-based milk, a spoon of plant-based yoghurt and mashed banana to a reusable jar (finished jam jars work well). Pop in the fridge overnight, and it is ready to grab in the morning. Add a drizzle of peanut butter, a sprinkle of seeds, or a pinch of cinnamon to make it your own. Eat cold, or warm it through in the morning if a cold breakfast doesn’t suit the weather.

Yoghurt, Warmed Berry & Seeds Bowl

Yoghurt bowls are great for building around whatever’s in the fridge. An easily customisable, protein packed breakfast option. Greek yogurt makes a great high-protein base, and you can swap to a plant-based alternative yoghurt and ingredients to suit your taste.

Warm up a handful of frozen berries until they break down slightly, then spoon over yoghurt. Add a sprinkle of seeds, a small handful of nuts or granola (low sugar preferred). Drizzle nut butter over the top if desired.

Scrambled Tofu & Mushroom Toast

This one is a great option for when you have a little more time in the morning. Tofu is made from soybeans, which is a great source of protein to kickstart your day. Soy is a plant-based complete protein, which means it contains all nine essential amino acids, and is worth building a breakfast around.

Cook a clove of garlic and a handful of sliced mushrooms over medium heat until soft. Crumble half a packet of firm tofu into the pan, stir, season with turmeric, nutritional yeast, salt and pepper for taste. Pile onto a slice of toasted wholemeal bread.
